Fried Goat Cheese with Honey

Yield: 4 servings

Ingredients

1 pound log of goat cheese

1/2 cup all-purpose flour

2 eggs, beaten

2 cups panko bread crumbs

2 quarts high heat oil

1/4 cup honey

Flakey sea salt, for finishing

Instructions

Slice the goat cheese into 1/2-inch rounds and freeze for 2 hours.

When the goat cheese is frozen, set up frying station with flour in one bowl, eggs in the next, and panko in the third bowl.

Heat the oil to 350 degrees in a large pot.

Dip the frozen goat cheese into the flour first, then egg, and finally the bread crumbs to coat.

Fry each goat cheese round until it is just golden brown, remove from oil and cool slightly on a rack.

To serve, lay the fried goat cheese on a platter, drizzle with honey and sprinkle with sea salt. Serve hot.
