Peperoni Alla Salernitana (Braised Peppers with Potato and Basil)

Ingredients
4 red bell peppers
4 large Yukon Gold potatoes, peeled and cut into 3/4-inch dice
1/4 cup olive oil
4 cloves garlic, peeled and smashed
1/4 cup red wine vinegar
About 1 cup basil leaves
Kosher salt, for boiling potatoes and seasoning
Instructions
- Roast 2 peppers over an open flame on the stovetop. You want to blacken the pepper, while still allowing the shape to not collapse on itself. If the pepper overcooks, the flesh will start to almost melt away. We want to only peel away the skin, leaving the pepper flesh still firm.
- Once the peppers have darkened thoroughly on all sides, place them in a bowl and cover with plastic wrap. Once the peppers are cool to touch, peel the skin away and discard. Remove the seeds and chop the peppers into a 3/4-inch dice.
- Cut the remaining 2 raw peppers into the same size as the roasted peppers.
- Bring a medium pot of water to a boil. Once it reaches a boil, heavily salt the water and cook the potatoes for 10 minutes, or until tender when pricked with a fork. Drain the potatoes and spread evenly onto a baking sheet to cool.
- In a heavy bottomed pan, warm the olive oil over medium heat. Add the raw peppers and saute a few minutes until fragrant. Add the smashed garlic, the roasted peppers, and the vinegar. Turn the heat down to a medium low and allow the mixture to simmer for 25 minutes.
- Add the cooked potatoes and basil leaves. Season to taste with salt. Continue to cook until the potatoes have warmed through.
